Poulet à l’ananas, curry et lait de coco

J’ai acheté un ananas frais mais après en avoir mangé la moitié en dessert il fallait faire autre chose.
Donc voici un poulet à l’ananas et au lait de coco. Finalement c’est une recette assez classique.

Ingrédients
• 2 filets de poulet
• 20 Cl de lait de coco
• ½ ananas ou 4 tranches
• 1 oignon ou 2 petits
• 2 gousses d’ail
• 1 cuil. à soupe d’huile de colza
• 1 cuil. à soupe de curry en poudre
• 1 cuil. à café de gingembre en poudre
• ½ de cuil. à café de curcuma
• Poivre fraîchement moulu

Préparation
Couper le poulet en cubes. Peler l’ananas et le couper en morceaux.
Dans une cocotte en fonte ou dans une,grande poêle, faire chauffer un peu d’huile, y faire dorer le poulet sur chaque face puis réserver.
Faire ensuite revenir l’oignon émincé quelques minutes. Réserver.
Faire revenir les morceaux d’ananas avec un peu de sucre.
Mélanger les épices avec le lait de coco et ajouter tous les ingredients mis de côté.
Râper les gousses d’ail dans le mélange et cuire 15 minutes à feu doux en remuant sans arrêter.
En fin de cuisson saler et poivrer au goût.
Servir avec du riz.

[日安小廚房]番茄牛肉燉鷹嘴豆Channa Peshawari


身為超級食物的鷹嘴豆,對人體的益處無須我在這裡贅言。

它除了是我的常備主食之外,也能變化出許多非常美味的佳餚。


印度有一道料理就叫做Channa Peshawari。

換成另一個大家比較孰悉的名稱Chickpea Masala,就是用混和香料去烹煮鷹嘴豆的意思。



<食材準備>

鷹嘴豆-150g  以清水泡數小時或泡隔夜

牛肉絲(後腿心部位)-300g

番茄-250g  切丁

罐頭番茄丁-1罐(220g)

Rogan Josh Sauce-半罐(225g)

優格-150g

綜合香料-2 tbsp

薑黃粉-1 tbsp

卡宴辣椒粉-1 tbsp

澳洲洋蔥-小型4顆(350g)  切細末

蒜泥-1 tbsp

薑泥-1 tbsp

辣椒-2根  切細末

印度酥油Ghee

喜馬拉雅山玫瑰岩鹽

香菜-2株  切碎


<作法>

1.以印度酥油熱鍋,加入綜合香料炒香

2.加入蒜泥、薑泥、洋蔥末、辣椒末炒香

3.加入薑黃粉、卡宴辣椒粉,拌炒均勻

4.加入牛肉炒至上色

5.加入番茄,拌炒均勻

6.加入罐頭番茄丁,拌炒均勻

7.加入Rogan Josh Sauce,拜炒均勻

8.鷹嘴豆瀝乾,加入鍋中

9.加入清水至與食材齊高

10.以大火煮至沸騰後,蓋上鍋蓋,以小火燉煮一小時

11.燉煮過程需適時開蓋攪拌,避免沾鍋

12.加入優格,拌勻

13.以玫瑰岩鹽調味

14.起鍋前加入香菜提香,完成


綜合香料是料理層架上的常備用品。

本周新鮮研磨了一批,也將配方記錄了下來。

八角、丁香、眾香子、茴香籽、葛縷子、蒔蘿籽、咖哩葉、黑芥末籽、小豆蔻。



好好吃!

加了足量的番茄,在鮮明香料氣息中帶著迷人的酸度。

搭上鷹嘴豆清新的滋味,是不易厭膩的,正好的美味。


最大的問題是,除非上印度餐館用餐之後順道打包回來,否則家裡不太會出現Naan。

我不會做…也沒有興趣會做…

不過超市可以找到一種現成的印度煎餅,回家煎熟或是放入烤箱烤好,就可以沾取著Channa Peshawari享用。

有時,挺享受這樣的居家半調子印度之夜。
