No I’m just saying, physical energy can you turn into thermal energy how hard do I have to punch a chicken to cook it?

Chicken Fajitas

If you don’t immediately think of the episode of Friends where Ross is fine when you think of fajitas, then we can’t be friends. Super easy and packed with flavor.


Ingredients:

2 large boneless, skinless chicken thighs, cut into long strips

1 large onion, julienned

1 large orange bell pepper, julienned (I think orange tastes the best)

1 tbsp vegetable oil

3 cloves garlic, minced

Salt

Pepper

Cumin

Smoked paprika

Red pepper flakes

1 lime, cut into sections

Cilantro


1. Heat up the vegetable oil in a cast iron skillet over high heat. While the pan heats up, season your chicken generously with the salt, pepper, cumin and smoked paprika. Once the pan is really hot, add in the chicken. Cook for about 6 minutes, stirring and moving the chicken around constantly. (The chicken won’t be 100% cooked through but that’s okay). Remove the chicken from the pan and place it on a plate. Set aside.

2. Drain off about half of the liquid in the pan and return it to the heat. Add in the onion and pepper. Season generously salt and pepper and add in the garlic and red pepper flakes. Stir around to combine and cook for about 5 minutes.

3. Add the chicken back into the pan and stir to combine with the peppers and onions. Cook for another 6-7 minutes, until the chicken is cooked through and the onions and peppers still have some crunch.

4. When the fajitas are done cooking, remove from the heat and squeeze fresh lime juice over the top and sprinkle on some cilantro. Serve hot and enjoy!
