Nothing fancy....just some chicken simmered in a Sicilian seaport inspired sauce (Ok, Marsala) with grilled asparagus and my famous mashed potatoes.

30 Minute Pumpkin Miso Soup

Another 30-minute 6 ingredient soup recipe coming your way today! 

Ask anyone who knows me and they’ll tell you my favorite foods are soup and salad. Creamy soups are at the top of the list. This pumpkin miso soup is perfect for a weeknight where you’re thinking I can’t possibly get a meal on the table quick enough. Fear not! With six ingredients and all of them, I bought at my local Target when I was there buying detergent because yeah laundry needs to get done too. 

The creamy factor is off the charts and if you are not a pumpkin fan you can easily switch this to butternut squash. In that case, you can buy the frozen butternut squash chunks, defrost, place in blender with some of the broth and then place ingredients in a pot to heat through. This soup is great for meal prep too. Tastes great the next day! 

INGREDIENTS

  • 1 (15-ounce) can 100% pure pumpkin
  • 1 (32-ounce) Organic Miso broth ( I buy mine at Target) if you can’t find miso broth replace it with vegetable or chicken broth
  • 1 (13.5-ounce) can Organic light coconut milk
  • 1 (12-ounce) package mashed cauliflower original
  • 2-3 tablespoons 100% pure maple syrup
  • 1 tablespoon yellow curry powder

DIRECTIONS

  1. Place all ingredients in a pot and heat on medium heat 15 minutes or until heated through.
